There has been a huge resurgence in canning lately.  Perhaps it is a desire to get closer to the land again, or to embrace our old fashioned values and culture, or maybe it is simply a greater desire for healthy, homegrown food.  Whatever the reason, more and more people want to learn how to can food like their grandparents, and great-grandparents did.  Wonderfully, learning to can safely and efficiently is easier today than it ever has been.  Between the internet  and your local extension center all the instruction, time tables, and recipes you need are readily available.

This week we canned 56 pounds of green beans, a favorite in our family.  Follow us over these next few days as we take you through the steps to can your own green beans for winter.

If you want to get ahead and just can your own today, below is the link to the USDA’s Complete Guide to Home Canning.  It has everything you need to can just about anything.
